i about died when i saw this.

but really i love this. it cracks me up & everything jason wrote is classic. sadly, we didn't get snowed in or play twister on our first date, but i wouldn't mind living in fiji.

isn't life funny?
its crazy how you have a plan(s) & those plans can change without your control.
you just gotta roll with the punches & learn from it.
some things have changed around here in just the past week
but instead of boring you with that, i'd rather update you on other random & more exciting things that have been happening..

1st things first:
i have fallen in love with cooking & want to get better.
although i can be quite picky, i keep on wanting to try new things.
& it's the best cooking for Jason. he loves food & loves anything i make.
(he might be lying about that)

So the other night i made BBQ chicken pizza.
easiest. thing. ever.
-dough, bbq sauce, rotissere chicken (shredded), mozzerella, red onions, cilantro.
done.

Kate & baby Beck came to visit us the other night while Pehrson is in Belize.
& let me tell you, my man can't get enough of babies these days. especially this one.
he might be a little baby hungry, but don't tell him i said that. ;)

my sweet sister in law Karly is officially engaged as of last night!!
Karly & Dave couldn't be more perfect for each other & im so excited to get another brother 
June 18th couldn't come any sooner for these two.
oh, just saw the pres today. & you better believe i stood on the corner of the street for an hour to see it. (and made some old lady friends that were cracking me up the whole time)
as much as every single person in West LA is going out of their minds because of traffic today, it was so cool to see this & how it all works. Helicopters, swat team, thousands of police, etc.
it was intense. I may or may not go walking by the restaurant he'll be eating at tonight. 
jason & i are giving each other easter baskets this year & i can't wait!! 
im secretly hoping he sends me on an easter egg hunt around our little apt.

today, i bought a few things for our bedroom & im in love with it.
still have some ideas that i want to do, but for now im satisfied.
thank goodness for wedding gift cards!!

im hoping we find time to see this movie this weekend

I'm all the sudden really into interior design.
Maybe because we spent part of our weekend in Pottery Barn, West Elm, etc.
I couldn't get enough and wished we could fast forward to 10 years where we are
hopefully living in a home and i can do whatever i want to it.
let alone, afford it.
but for now i can dream, right?

Honey Lime Enchiladas

We have a new favorite dish in our house.
we had people over the other night for dinner & i made this & found it

de-lish.


recipe:

6 tablespoons honey
5 tablespoons fresh lime juice
1 tablespoon chili powder
4 cups chicken, cooked and shredded
1 can black beans, rinsed
tortillas
green enchilada sauce
shredded cheddar cheese


mix honey, lime juice, chili powder, and chicken together and marinate for at least 1 hour.  (i did it before work & left it marinading until i got home) cover bottom of baking dish with a small amount of enchilada sauce.  assemble enchilada by placing a heaping spoonful of chicken, a spoonful of beans and cheese in tortillas.  roll up and place in baking dish.  top with remaining sauce and cheese.  bake at 350F for 20-30 minutes or until warmed through and cheese is melted.

add sides of torilla chips & some guac/sour cream and you're good to go.

i love this lady.
isn't she a fox? i know.
today is her BIRTHDAY!
few things i love about my mom:
-she is the coolest, and at times still is a fun 21 year old. and I LOVE IT!
-i get all my dance moves from her..she can really get down.
(we have a few moves in our family that we always do.."the cindy" our friends even do it)
-she has a billion friends and everyone LOVES her.
(my friends wouldn't come over to see me, they came to hang out with my mom)
-she is so thoughtful and the most unselfish person i know, she ALWAYS puts others first.
-she is such a hard worker.
-she has so many talents, i don't even know where to begin.
-she still has girls nights & her perfect day is at the beach with a book. my kind of person.
-she is my best friend and i've always told her EVERYTHING..too much maybe ;)
-i am who i am because of her
HAPPY BIRTHDAY SWEET MOTHER OF MINE.
you just keep getting younger.
